The top one is the winner of the two... see how the bright area on the right on the bottom one takes your eye away from the face and focal point? Sunshine directly on that cloth is beyond the dynamic range of the sensor and is "blown out". HDR in the iPhone 12 helps fix that issue by making a separate exposure for that area then combining them.... once blown out though the only cure is to crop the area or fill with content aware or other cloning method.
